Terri’s Amazing Protein Bars

These bars are delicious! And very easy to make, I’ve made them several times already. I am no wiz in the kitchen so, if I can make them - anyone can.

My Preggo’s love them and they help with constipation a common side effect of pregnancy.

Chop/Pulse the following ingredients in your food processor:

  • 1/2 cup of fruit (Raisins, Dates, Figs, Plums)

  • 2 cups Raw Almonds

  • 1/4 cup Flaxseed

  • 1/4 cup Chia Seed – If you prefer, you can cut back on the Chia Seeds as these bars will really move you, if you know what I mean!

  • 1/2 cup Unsweetened Coconut Flakes

  • 1/2 tsp Sea Salt

  • 3-4 Squares of Dark Chocolate

Next, add to processor and pulse together ½ cup Coconut Oil (melted), 1/2 cup Raw Almond Butter,  1-2 Tbsp Raw Maple Syrup OR Raw Honey and 2-3 Tsp Vanilla.

Remove mixture and spread into a baking pan.  (I got two pans with this batch.)
Refrigerate until firm.
Cut into squares then enjoy!
